I have a question about the recipe "Olive Oil Poached Fish or Shellfish" from amanda. Regarding the oven-poaching...do you completely cover the fish with oil, plus one-eighth inch, or do you mean one-eighth inch from the bottom of the dish?

No need to completely cover the fish. I mean one-eighth inch from the bottom of the dish.
