I have a question about the recipe "Coconut Milk Rice Pudding with Citrus and Ginger" from Gena Hamshaw. Could I use almond milk instead of coconut milk?

I think you definitely could, but it probably wont be as creamy or decadent bc of the difference in fat content.

You can use almond milk, though it won't be quite as creamy!

I make a breakfast rice pudding with almond milk fairly frequently--but it doesn't have a lot of fat so I use arborio rice.
