I have made pizza out of bread dough, but never the other way around. I think it would be about the same but for the bread, you would just give it a longer rise.

Yeah, but it'll be a heavy loaf. Piss bread is meant to be a flat bread.

I work in a bakery. I can't speak for all bakeries, but the pizza dough that we sell is our french bread dough.
