I agree with Chef June. I usually calculate 1/2 pound per person even counting the bone. The bone will also add more flavor.

If it's a pork shoulder, I usually calculate that the cooked meat will end up being about half of the total weight, or perhaps a bit less (and even less if you bought it with the skin attached). So each person would easily get a 4- to 5-oz serving - with your side dishes and everything else you serve, it should be fine.
