I am wondering what is the best method to shorten the cooking time for large baked potatoes, without them becoming starchy.

Poke with a fork, and depending on the size, 5-10 minutes in the microwave until slightly soft. This will cut the baking time down to about 20 minutes, as opposed to over an hour.

If you want to bake in oven, poke with a fork and stick a metal kebab skewer through it. Will greatly shorten the cooking time.
