another question - recipe calls for 4 lbs of fresh sweet potatoes - how many ounces would that be of cooked/canned sweet potatoes?

totally depends upon the size of the potatoes. You really have to weigh them if your recipe calls for them by weight.

Pile them on your bathroom scale if need be -- it'll be close enough. They do vary tremendously in size!

Hi, Cristina. Sweet potatoes really tend to vary in size. A medium-sized one may be about a quarter pound. Large ones can be about 1/2 pound or so. The best thing to do is just pile about 10 to 12 in the weighing basket at the supermarket and adjust from there. If you pick medium-sized ones, you'll probably need about 16 or so.
