I recently did a newspaper story on malt powder, and I tasted several different types. It depends a bit on what you are looking for. If you want the traditional soda shop malted milk powder, I'd recommend the brand "Soda Fountain", made in WI and found on amazon or their own web site http://www.ctlfoods.com/malted-milk-powder/. King Arthur's brand is also very good. Both have a limited amount of ingredients and taste better than Carnation brand. King Arthur also sells plain malt powder, which would not be used to sweeten ice cream but to help develop yeasted breads.

Both King Arthur Flour and Amazon sell it.
