Another eye catcher is Floating Island. Check Martha Stewart's recipe.
It is a soft meringue baked in an angel tube pan and unmolded on a plate that is deep enough for a generous drizzling of creme Anglaise all over the meringue followed by caramel syrup.
Another one which is indeed crazy due to the enormous amount of egg yoks but so very delicious is in FOOD52 under me (Regine). Called Blame it on this decadently rich brioche........ But it is best served for brunch or afternoon tea/coffee.
Going to be trying to make rye cinnamon rolls with chunks of granny smiths, pecan halves rolled in and a maple glaze. I know it not a cake but it's something that has been at the front of my mind.
This is not a crazy cake but definitely an eye catcher. Bloom's Coffee Crunch Cake. Here is link

Martha Stewart has a recipe for a rainbow cake. I'm not too into such heavy use of food coloring, but if it doesn't bother you, the cake is definitely an eye catcher.
How about a meatloaf cake with mashed potato frosting. This was the craziest cake I ever made
