what texture should wild sockeye salmon be like?

Wild Sockeye is decidedly NOT fishy. It is the premium salmon. It is bright red, firm and luscious. Copper River is a sockeye salmon as well. It is caught on the Copper River hence the name.

Yes, a very firm texture. If you've had farm salmon, you're used to a lot more fat. Wild Sockeye is definitely more fishy, not my favorite of the wild salmons.

Cooked? Raw? It has a very firm texture and rich flavor. It is my favorite of the salmons with Copper River a close second.
