I have some ugly CEDRO lemons, any suggestions as to what to do with them?

There is a classic salad made in the Amalfi region, where cedri grow. Peel off the yellow skin, then slice the cedro in half lengthwise. Cut off the white pith and slice it very thinly. Dress with olive oil, lemon juice, salt and pepper and let sit for a while. Before serving, add a few black olives.

Some lemons might be ugly on the outside, but beautiful on the inside. You shouldn't be so judgmental.
