Need some ideas on serving grouper filets -- grilled, sautéed, broiled, baked, etc...

When I'm in the South, I always order grilled grouper sandwiches. Now, I want to prepare it as an entree -- something different.

I love grouper's flavor and meaty texture. We very rarely see it sold up here in Boston. I would not deep fry it- which would mask its flavor. Personally i would flame grill it. Serve it with a lime ginger or citrus beurre blanc. Wolfgang Puck has an excellent seafood with lime ginger beurre blanc in his Wolfgang Puck Cookbook.

Grilled grouper makes fabulous fish tacos. Warm flour tortilla - grilled grouper - shredded cabbage - avocado - chipotle mayo - cilantro - fresh lime juice.

Cook it Sous Vide (or steam or grill). Top it with a chunky mango salsa. Mango - red bell pepper - red onion - cilantro - fresh lime juice. Sometimes I add a bit of coconut. Pure Florida goodness!

Grouper must be blackened IMO!! I don't have a specific recipe to offer, but a Google search will turn up a bunch.
