If you cook dried beans, toss the rind(s) in the cooking water, adds a wonderful flavor. Toss the rind when the beans are done - its given up its flavor and is pretty much inedible.

If you don't have but need just the rinds, Whole Foods sells them by the cheese section.

You can save the rinds in a bag in the freezer when you finish a wedge. A shame to toss them out!

When you buy a wedge of parmesan cheese, there's a hard edge at the wide end. That's the rind. It can be used to flavor broth, and it won't melt away.
