Electric mixers are a convenience, not a requirement! If you want to develop stamina and muscles, you don't need a mixer. That said, scones, short cake, soda bread, or sweet yeast breads are easily done by hand.

All brownie recipes. Oil based cakes are easier that butter based as you don't have to worry about creaming.

Most butter cake recipes can be made without an electric mixer, just need a little extra elbow grease: cream the butter and sugar with a wooden spoon, add the eggs one at a time, switch to a whisk to incorporate the milk and flour mixtures--makes a denser cake. But cake baking was around long before electric mixers.

Ditto with cookies. A wooden spoon is all you need. In fact, you don't even need a wooden spoon. I mix some of my favorite cookies with my (very clean) hand.

Carrot cake....,don't know recipe off the top of my head but it's all mixed in one bowl , makes great cupcakes, rose levey bernbaum recipe is great
