I've also frozen nearly all types of cookie dough. The stage at which you freeze depends on the cookie: for drop cookies, I form and freeze on a cookie sheet, then store in a freezer bag to pull out and bake as needed. Slice and bake I freeze after rolling, wrapped very well.
In all cases, I bake them straight from the freezer, adding a minute or two to baking time.

I freeze cookie dough all the time. When you say "all," I think I wouldn't freeze dough for meringues.
