I third the cucumber salad- I make a faker version- peeled seedless cucumbers, sichuan peppercorns, salt, chili oil, & chopped garlic- I let it sit for a bit- its so freakin' good.

Also I think dumplings go with everything.

Like TobiT suggested, a cucumber dish would work well - use the technique in Fuchsia Dunlop's "smacked" cucumbers recipe. (The spiciness in her recipe might be too much with Dan Dan noodles though, so I would just toss them with an Asian-inspired vinaigrette.) Believe it or not, I've actually found that good ol' peanut or cashew butter on celery sticks makes a great side to most Szechuan dishes. Some greens steamed with ginger would be a more traditional option.

If you want to stick with the Szechuan-ish theme, then I'd go with something like a cucumber salad and maybe some grilled pork. Or a delicious broth soup with dumplings/wontons. Depends on how much food you want
