Does anyone have a great recipe for baked oatmeal?

With fall right around the corner, my go-to is a pumpkin pie baked oatmeal. Combine 2 cups rolled oats, 1 cup of pumpkin puree, 2 eggs, 3/4 cup milk (I use almond milk), 1/4 cup oil or melted butter (I used coconut oil), 1/4 cup pure maple syrup, and 2 tsp pumpkin pie spice, plus an extra 1/2 tsp of cinnamon, and a pinch of salt. Mix well, pour into a greased/sprayed baking dish and bake for 20-25 minutes at 350 degrees. Top with chopped walnuts or pecans and a drizzle of maple syrup :)

This is my best friend's now defunct food blog, but this recipe is endlessly adaptable. I make it all the time, and now I add chia, flax, whatever. I've used nondairy milks, mashed bananas, etc...and it always comes out great. It also freezes and reheats well.
