Is it possible to freeze assembled macarons? I'm making for a party and would like to get a head start.

I always freeze mine and they are yummy.

we freeze them every year during christmas cookie craziness. they actually defrost great as do other meringue based cookies. mmmm...drizzled with dark chocolate...

Hi
when freezing them, doesn`t thawing produce condensation on
the surface? Isn`t there any problem in packaging macarons just coming out from freezer?

Macaron shells freeze very well! In fact, many chefs prefer to make the shells a day ahead and freeze. I would make the shells, freeze them directly on the sheet pan (cooled and tightly wrapped), but I would assemble them day of. Make the filling and have it ready, but try to set aside time before the party to build them. You COULD freeze them assembled, but the thawing process isn't kind to some fillings.

You could get head start in other ways...assemble your egg whites, store or use the unneeded yolks, make your filling a day or two ahead, make sure you have all needed ingredients for flavoring the macarons...

before baking? I wouldn't. OTOH, you could be your own guinea pig and try it.

You can easily freeze the baked shells. I would not freeze them assembled, but have never tried.
