What are your favorite uses for filo pastry?

For some reason, my family has made me the recipient of their excess frozen filo. I'm looking for some ideas for apps, main dishes, or desserts. My only concern is that the filo seems fragile, so I don't think rolled applications are going to work.

These all sound good--thank you! I may have a filo fest next weekend, with spinach and meat pies for dinner, and baklava and galactaboureko for dessert. I'm getting hungry already!

Spanakopita and baklava are two layered filo staples. An apple pie with a filo crust is possible too: http://www.epicurious.com/recipes/food/views/layered-apple-pie-with-phyllo-crust-56390160

You might also try deconstructing the sheets, combining the dough in a food processor with some sugar, spices & butter making a crumble.
