Almond milk doesn't typically curdle but it does usually have little bits of almond solids which float around and like all nut milks it separates pretty quickly if you don't shake it so most people find it unappetising in drinks (this is why it's not used in coffee as frequently as soy). If you want an almond flavoured drink I'd recommend trying almond extract.
Are you making this for someone dairy-intolerant and/or wanting the almond taste?
Maybe make a lemon curd (with whatever fat is acceptable), then thin it out for a drink. The acid in the lemon will be modified by the fat.
Also, consider adding almond extract or liqueur for almond flavor.
It's not for lactose intolerant person. Was trying 4 easy either/or kids adult drink & already know how lemons/acids & dairy mix. Since no one I know is lactose intolerant I don't know properties of alternatives.
I have bad news. I know someone who sours almond milk with lemon to sub for buttermilk in baking. She makes her own and I have heard her say store bought almond milk doesn't behave the same way, but that part isn't confirmed.
