add beans (kidney, cannellini, or even chickpeas), small tube pasta, broth and some canned tomatoes to make a delicious soup!

The foods of the Americas:
Chile relleno: roast the veggies and stuff into a large, mild pepper, such as a poblano, then bake or grill. Top with shredded cheese and salsa.
Tortilla soup: Drop the veggies into a chicken broth with shredded chicken and garlic. Garnish with cilantro. lime, and a splash of hot sauce.
Huevos tacos: Heat tortillas to warm up. Place on plates. Saute veggies in a little olive oil with garlic. Remove from heat. Make scrambled eggs, top with veggies and turn out into tortillas. Serve with cheese and salsa.

I might go southwest - black beans and seasonings like cumin and chili powder with some olive oil and vinegar, add ric and some protein with tortillas and avocado.

Some kind of corn pudding or corn casserole? Sorry I don't have a recipe handy, but google 'corn pudding bell pepper' and see if something interesting pops up.
