A legume (beans) plus a grain (rice) equals a complete protein. Plus a wonderful combination!
I usually serve it with either grilled vegetables or beans and rice (or both), as well as salsa verde.

Black bean and white corn salad. Drain and rinse a can of black beans. drain a can of white shoe-peg corn. Dice about 1/2 cup of roasted red peppers. Add two tablespoons or so of whatever salsa/picante sauce you have in the fridge. Add 1/2 to 1 tsp. each ground cumin and smoked pimenton. Chill and serve.
I like a smoky guac...crisp, thick applewood bacon, ripe avocado cut into cubes (do not mash!) Bleu cheese crumbles. add cumin, ground chipolte and kosher salt to taste. Enjoy!-lorig
I love a salad of avocado, grapefruit or orange segments, romaine, thin slices of red onion and a simple vinaigrette.
Spanish rice.
A salad with avocado..lime juice, salt, and olive oil..maybe cherry tomatoes cut in half. .
A corn and black bean salad with grilled corn kernels (frozen kernels okay drained and slightly cooked). A can of black beans (drain) lime olive oil, salt. (Parsley or Cilantro).
A tabbouleh salad made with red quinioa, and chopped parsley.
