So, I am making these black bean burgers, but the side dish is thai potatoes (coconut) so I'd like the burgers to perhaps have a thai dressing, or sauce. Something not too overwhelming and fairly simple would be best.

Black bean burgers go well with a hearty potato seasoning, thai or not. You might try well salted baked potatoes (thin sliced) with a sweeter rice wine or white wine reduction. Should be a good contrast.
