anyone have a good marshmalloiw recipe?

I've only made marshmallows or twice, from the Martha Stewart recipe, which is probably no better than any other, but I do have one bit of advice. You will need copious amounts of cornstarch to cover the pan you pour the goo into to let it set. DO NOT USE a non-stick pan. No non-stick baking trays or cake pans or anything. Just don't try it. I did it, and the set-up marshmallows adhered to the pan, even with the cornstarch, in a fantastical way. As I pulled the pieces out, they shredded the non-stick coating, completely removing it from the pan, and the marshmallows were absolutely inedible, covered with shards of non-stick coating. It's possible that it was a cheap, low-quality pan, and also that I didn't use enough cornstarch, but nothing would ever induce me to try that disastrous scenario again.

The biggest dividing line between the above recipes is if they contain whippped egg whites (like smitten kitchen's) or not. Personally, I prefer the version without--they're not as fluffy, but I can detect the egg white smell in the others. Curse my big nose.

My sister, SallyCan, made a batch shortly after the recipe was first posted, and sent some to me (from East Coast to West Coast, bless her heart). Outrageously tasty. I hoarded them, in fact, and had one tiny bite per day for as long as they lasted. Highly recommended. ;o)

I use the recipe from Maida Heatter's Book of Great Cookies. They come out perfect every time.

I am not brave enough to attempt to make marshmallows, but if I was, I would use Deb's recipe from Smitten Kitchen, which she adapted from Gourmet. She works hard to make her recipes foolproof. Good luck!

I have great success witht he recipe on the blog ezra pound cake. I think it was adapted from gourmet.com.
