A question about a recipe: Unnakkai

"1 Steam the banana with the skin and mash to get a smooth paste." does this have to be ripe plantains or will the regular generic cavendish banana work..

Panfusine As a south Indian you know that you have to use Cooked and mashed ripe bananas/ethakaya what you call in America ?
