From the headnote, it sounds like she'd use unsweetened, and I'd go for regular cocoa powder because she doesn't specify Dutch process.


While Peter no longer works for Food52 he still thinks up ways to make the website better.

Actually, I have used both unsweetened cocoa powder and Dutch processed and the both tasted great.
