Any particular type of cocoa powder? dutch processed? unsweetened? sweetened?

Actually, I have used both unsweetened cocoa powder and Dutch processed and the both tasted great.

From the headnote, it sounds like she'd use unsweetened, and I'd go for regular cocoa powder because she doesn't specify Dutch process.
