A question about a recipe: Fried Stuffed Zucchini Blossoms

I have a question about step 1 on the recipe "Fried Stuffed Zucchini Blossoms" from ChrisandAmy. It says:

"Fill a large frying pan up to about 1/2 inch with oil. "

What is the best oil to use for frying?

I like to use peanut, grapeseed, or safflower oil, or other oils that don't smoke at frying temperature. Some canola oils are pretty stable too, but olive oil will smoke if you heat it for frying.

We agree with Rivka's answer. Sometimes we use a blended oil as well.
