The sauce is a tomato sauce with sauteed onions and sweet peppers, garlic/basil/oregano, chopped olives and a little red wine, in a typical French style omelette -- according to Katzen's Enchanted Broccoli Forest.
Or do you mean the Spanish Tortilla, with eggs, onions and potatoes. Look for that on food52, with chorizo.
