is there an instant-read thermometer you prefer for baking, e.g. checking caramel, baking bread. sorry if this has already been addressed.

The most accurate, and fastest thermometers are called a "Thermapen". They can be very expensive, but you can get less expensive models that take just a bit longer to take the reading (8 seconds rather than 4). One Popular brand is ThermoWorks.
