I roasted my prok belly at 300 for 3 hours and the meat is perfect, buet the skin is really hard because not enough fat has rendered.

Peel the fat off your yummy piggy, place small chunks of skin on a track on top of a sheet tray. Place in a 350 F degree oven, check for crispiness ever 5 minutes. You will end up with crispy SKIN.

I think oven temp too low. Pork belly does not take 3 hours to cook. Not that thick.
