A question about a recipe: BRAISED PEARS WITH BRANDY ORANGE SAUCE

I have a question about the recipe "BRAISED PEARS WITH BRANDY ORANGE SAUCE" from Waverly.
Just wondering if you simply pour heavy cream along side the pears or whip it? I am assuming just pour?Maybe I will try both since this will be done soon!
