Soft vanilla cookie recipe without dairy

Howdy! Looking for a Soft vanilla cookie recipe that has no dairy, my go to is made with buttermilk and need to make kosher black & white cookies for an event... Any ideas???

Thanks wss! I'm going to sub almond milk in the one have, this sounds awesome I'm teaching a class and the gluten free ingredient list is might be too complicated
