You can make a really fab sauce with cream, lemon juice, shallots and dijon mustard... I think it's kind of a steak diane thing, but my BF makes it to go on burgers.

Wow, you guys are awesome! I am actually asking for a friend. I was reading an old issue of Fresh Home and they mentioned this site. I have it bookmarked now! Can't wait to read more when I'm a real computer vs my phone. Sorry for typos! ;)

I have a feeling they don't like the "gaminess" of the meat. Believe it or not I have tried this method on...wait for it...raccoon! People were surprised at how much they enjoyed the meat. In a food processor blend an onion, about a cup of yogurt and the juice of one lime. Place the meat in the mixture for one hour up to over night. You can then grill or pan sear the meat to how ever your family likes it. I'm with boulangere about not over cooking the meat. Good luck.

What a lucky family! I'd say a good sea or kosher salt, pepper, and don't overcook it.
