I have a question about the recipe "All I Want For Christmas Peanut Butter Cookies" from MrsWheelbarrow. Recipe calls for 1/2 vanilla bean, which I don't have. Can I substitute vanilla extract & how much? Thanks!

You can, it just won't be quite as delicious (think vanilla bean ice cream v. regular vanilla ice cream). I would go with a teaspoon, personally.

With the strength of the peanut butter flavor, I would guess the majority of people wouldn't even perceive a difference btwn the bean and extract. I'd also go with 1 teaspoon.
