Does anyone have a recommendation for a probe type candy thermometer which can stand the test of time and is accurate? I make caramel and suddenly I can't find a thermometer that doesn't go wacky on me within the first few usages.

Thermapen. Although its technically not a candy style thermometer, its more like a swively, probe, it can read fast enough so that you probably will not get burned. It will read in about three seconds and can give readings from well below zero F to above 500 deg F. Plus its digital and water resistant.
