There's Deborah Madison's Vegetarian Cooking for Everyone and Mark Bittman's How to Cook Everything Vegetarian. Are those what you're looking for?

Other great vegetarian cookbooks include Heidi Swanson's Super Natural Cooking; Deborah Madison's Vegetarian Cooking for Everyone; and Plenty by Yotam Ottolenghi. Good luck!
