Tomato achaar is a traditional Indian relish made with fresh tomatoes, tamarind, a mix of Indian spices, red chili powder, unrefined cane sugar and sesame oil. It hits all the flavor notes -- spicy, sour, savory and sweet kick. The roasted garlic version is made with roasted garlic, lemon, oil, a mix of healthful Indian spices, red chili powder, and unrefined cane sugar.

Think of it as India's version of Sriracha or harissa and made from local fruits and vegetables. Traditionally eaten with rice and dal, we like to add it to soups and noodles, or mix it with mayo for a spicy dipping sauce.

This small batch company specializes in Indian condiments handmade by Chitra Agrawal. Chitra is the creator of The ABCD's of Cooking, specializing in Indian vegetarian cooking using local ingredients. Since 2009, she has been writing about, teaching and making Indian recipes for local markets and special pop-up dinner events in Brooklyn. She started Brooklyn Delhi after discovering that she couldn't find great quality Indian condiments that she remembered from trips home, and we're lucky she is spreading the good word (and taste).
