Brownies with Bacon Caramel

There is not much to say other than; Everything is better with bacon.

These are probably the most decadent and delicious brownies I have ever eaten. They will keep for about a week (if it lasts that long!) in the refrigerator but make sure to heat them up before serving or eating. This will make the caramel in the center nice and gooey.

This recipe makes a large baking dish worth of brownies that can feed a crowd with left overs. It can easily be halved. —bethmichelle

What You'll Need
Ingredients
  • Caramel
  • 4 pieces Bacon
  • 1 cup Cream
  • 2 cups Sugar
  • 12 tablespoons Butter
  • Brownies
  • 12 tablespoons Butter
  • 12 ounces Dark Chocolate Chips
  • 1/2 cup Cocoa Powder
  • 6 Eggs
  • 2 cups Sugar
  • 2 1/2 teaspoons Vanilla
  • 2 cups Flour
  • 3 pieces Bacon, Cooked and Crumbled
Directions
  1. Caramel
  2. In pan, fry 4 slices of bacon until crisp. Remove bacon and set aside and reserve bacon grease in pan.
  3. Add cream to bacon grease and let cool completely.
  4. Crumble bacon and add to cream
  5. In a pot heat sugar over medium heat until sugar turns to liquid and turns a light brown color.
  6. Add butter and cream mixture to sugar and stir until combined and butter is melted.
  7. Set aside.

  2. Preheat oven to 350F
  3. Grease a large baking dish (I used a 13X8 1/2)
  4. In a large pot melt chocolate chips and butter over medium heat.
  5. Remove from heat and add cocoa and eggs (one at a time, beating after each addition)
  6. Add sugar, vanilla and lastly flour. Stir until combined
  7. Pour half the brownie batter into baking dish and layer with half of the caramel.
  8. Pour the rest of the brownie batter on top of the caramel and layer with rest of caramel.
  9. Using a knife swirl the caramel into the brownie batter and top with crumbled bacon.
  10. Bake for 40-50 minutes. Keep on eye on the brownies while baking. You do not want to over cook them. You want them to be slightly undercooked so they stay soft and the caramel stays gooey.
  11. Let cool completely. Cut into small pieces right before serving.

Love the idea, but these brownies just didn't deliver. The bacon flavor was lost in the overly sweet caramel and they lacked that rich decadent flavor the name implied. Next time I'll try a thicker, more flavorful bacon and add the caramel in squares instead of an even layer across the pan.

Although this was really delicious the bacon flavour and the hit of salty/sweet I was waiting for didn't come through. The next time I make these (and there will be a next time) I will adjust the bacon quantities to suit my taste buds. Great recipe. Thanks!

Oh my goodness... I agree.. Bacon Jam is to die for.
Excellent on an angus burger.
 
Tears came to my eyes when I read this recipe! I've made bacon pralines, but these sound fantastic! Can't wait to try them with my home cured bacon.

A friend of mine actually belongs to a bacon-appreciation club - I haven't been invited yet and am perpetually green with envy about it - I'll certainly have to share this recipe with her. Or just make a batch...and then eat all of them myself!

These sound incredible. I too love bacon in sweets but have never thought of brownies. The bacon and caramel combo (like salt and caramel) must be ridiculous. Can't wait to try it out!

These are now baking in my oven .... how could I NOT immediately make them when I read: Brownie. Bacon. Caramel. Cannot wait to try them as they smell out-of-this-world. Thank you, bethmichelle.

PS Bacon jam is also a favorite of mine .. amazing on any kind of burger!!

Bacon jam?! That sounds pretty fabulous! As for my inspiration for the brownies, I love putting bacon in sweets, chocolate chip cookies, chocolate cupcakes and even just candied bacon. I thought then why not brownies. I saw a recipe somewhere awhile ago that was for caramel brownies and combined that with the bacon idea!
