Sliced Mushroom Mozzarella Appetizers

These were inspired by those zucchini and spinach squares you see all over made with baking mix. The little crunch on the edges is especially nice and the aleppo adds just a little background warmth. —inpatskitchen

What You'll Need
Ingredients
  • 2 tablespoons butter
  • 8 ounces your favorite mushrooms, sliced
  • 1 clove garlic, minced
  • 1 green onion, sliced
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon aleppo pepper
  • 1 tablespoon sliced fresh basil
  • 2 cups shredded, part skim mozzarella cheese
Directions
  1. In a saute pan, brown the mushrooms and garlic in the butter. Add the green onion and saute about 30 more seconds. Let cool.
  2. In a medium bowl combine the milk, egg, flour, baking powder, salt, aleppo and basil.
  3. Stir in the mushrooms and cheese. Spread into an 11x7 baking dish which has been coated with cooking spray.
  4. Bake at 350F for about 30 minutes. Cut and serve when slightly warm.

I think I get my love for food and cooking from my mom, who was an amazing cook. She would start baking and freezing a month before Christmas in order to host our huge open house on Christmas afternoon. I watched and I learned...to this day I try not to procrastinate when it comes to entertaining. My cooking style is pretty much all over the place, although I'm definitely partial to Greek and Italian cuisine. Oh yes, throw a little Cajun in there too!

I made these Friday for New Year's Day. I used baby bellas and Monterey Jack. I thought they were very good. Great appetizer. Will do again.

This is a great recipe, however, I would like to suggest using live cheese and not the prepackaged from the market that have no flavor. There are a couple that I have found at the local big store like Kerry Gold, fresh mozzarella, and some good blue cheese but there are so many more wonderful ones to be discovered. There are places online to get truly delicious and flavorful cheese that will overcome the blandness or maybe you have a gourmet food source near your home. It makes all the difference in this particular recipe. If you are in a hurry or don't have special cheeses, adding some blue cheese will certainly ramp up certain dishes such as this one. If the cheese is the star in the ingredients it is worth it to find a good one! : )

I appreciate your gratitude and I think the recipe is also good as is. Also, if anyone has the time, homemade mozzarella is really easy to make and there are recipes for this online too. It is just a matter of heating the milk and adding lemon juice or citric acid to separate the curds and whey and then I wrap the curds in a flour sack dishtowel or muslin cloth and let it drain the whey into a bowl. The whey can then be used to ferment veggies. Fresh cheese does not melt as well as aged but it will still be delicious. Thanks again!

I used portabella mushrooms and pre-shredded cheese. Very bland tasting for me. Loved all the ingredients, though. Tweaking definitely necessary to make my crowd happy.

Sounds easy and delish. Have you ever made it ahead and then stuck it in the oven when you want it ready for your quests? It seems like the kind of dish that you could make earlier in the day and just pop in the oven right when your quests arrive.

I haven't but I don't see why not...I probably would wait to put it in the baking dish so that the mixture can be re-stirred. I know you can double this if you need more. Thanks for your kind words.
