Test Kitchen Notes

Following lowecc's instructions I used my favorite seasonings in fact I seasoned these two ways, to test the coffee flavor. The first was seasoned with just pepper and crushed oregano. The second was seasoned with a drop or two of sherry vinegar (rubbed into the chop), smoked paprika, garlic and onion powder. Of the two I really like the second. Both were equally juicy after grilling and I could clearly taste the coffee in both chops. This is a good technique. - Javajunkie —Javajunkie

What You'll Need
Ingredients
  • 4 cups Freshly Brewed Coffee
  • 1/4 cup Sea Salt
  • 3 tablespoons Molasses
  • 2 cups Ice
  • 4 Pork Chops
Directions
  1. Combine coffee, salt & molasses add ice cubes to cool mixture. Add Chops and brine for 6 hours min in refrigerator. Remove chops from brine & pat dry. Season with favorite rub or with salt & pepper. Pan fry or BBQ until meat reaches 160 degrees.

Just finished eating this and it is superb. Wonderfully flavorful and moist. Took @aargersi's suggestion and and made a mix of brown sugar, smoked paprika with a pinch of raw cacao powder that I rubbed in just before grilling. Served with a kale salad with a sherry vinegar based dressing. Yum!

We had these last night - hallelujah for juicy pork chops! They were great! I made my seasoning from some sundried chili powder (my sister gets if for me in Chimayo) and a little sugar, salt, pepper, a teeny pinch each of espresso powder and cocoa powder. We gnawed the bones.

I tried this the other night and cooked them with a splash of sherry vinegar and smoked paprika. Very juicy and the coffee came right through.
