Roasted Summer Squash and Herb Yoghurt

- 4 Summer squash, small, any variety
- 1 cup Greek yoghurt
- 3 sprigs Fresh mint
- 3 sprigs Fresh Dill
- 1 tablespoon Olive oil
- 1 pinch Sea salt, generous
- Fresh cracked peppercorn
