ZESTY HALF AND HALF

Author Notes: I love ice tea and drink it all year long. There is always a jar brewing on my countertop; what is called sun tea. A big squeeze of lemon juice or two or three are always added...no sugar. In restaurants I often order that drink named after a famous golfer. I love the combo of ice tea and lemon juice. Sometimes it is called a half and half because that is the ratio of ice tea to lemon and water. My version has a rim of lemon zest to punctuate the flavor of the lemon.dymnyno

Serves 8

  • 6 Earl Grey tea bags
  • 10 cups cold water
  • juice of 5 lemons(1 cup)
  • simple syrup or sugar
  • zest of 3 lemons
  1. In a large pitcher put 6 teabags and 6 cups of cold water and leave until it makes strong tea (usually about an hour)
  2. Juice the lemons(you should have a cup of juice) and add about 3 cups of cold water. Zest at least 3 of the lemons.
  3. Mix the tea and the lemonade together and add sugar or simple syrup to taste. ( I usually do not add much sugar and leave that to each drinker)
  4. Rinse glasses and place in the freezer for about an hour prior to making the half and half so that they will achieve a nice frosty appearance when you fill them.
  5. Remove the glasses from the freezer and dip the rim in lemon zest. Add ice and add the half and half. Add more sugar if you want a sweeter version.
  6. If you want a sweeter drink, you can mix sugar with the zest and use that mixture to rim the glass.

Like the zest rim in lieu of a salt or sugar rim. When we were first married, I put a jug of tea to brew on the counter after we had finished the dishes late one night. My husband asked if I was brewing "Moon Tea"!

Love this! I'm a big AP fan, and generally make my own as the commercial stuff is way too sweet. Your version using Earl Grey is inspired!
