Parsely Fritatta Pita Sandwiches ( Ejjeh Bakdounez)
Author Notes: This is the ultimate Syrian street food.....whether we are going to the beach, on a picnic or need to pack up a lunch, this easy to make fritatta always works! - Joy Betesh
Serves 4-6
- ! bunches parsley
- 1 medium onion chopped fine
- 6 eggs
- 1 teaspoon allspice
- 1/2 teaspoon cinnamin
- 1 teaspoon salt
- 5-6 tablespoons oil
- 1 tomato sliced
- Pita bread
- Wash the parsley, remove the stems and chop fine. You can also pulse in a food proccessor. Add the eggs, onion and spices, mixing well. Heat the oil in a frying pan and when hot drop spoonfulls of the parsley and egg mixture into the pan, frying till golden brown on both sides.
- To assemble sandwiches.....In a 1/2 a pita place 2 fritattas and sliced tomatoes.

I know this is delicious, I have made this before slightly different it was a recipe from Iran ate it just like you picture. Its wonderful.
