Triple-Berry Ice Pops

When the heat rises, cool off with a delicious frozen treat. Loaded with fresh berries, these ice pops are perfect on hot summer days.
I couldn’t believe how simple it was to make these frozen treats. You can strain out the seeds if you like, but I love the texture they give to the ice pops or use boysenberries, pitted cherries, or other favorites instead of the combination of fruits or berries I have in here or just strain, chill, add sparkling water and you will have a delicious and healthy drink.
The idea for this ice pops I got from a Martha Stewarts show about Vitamins and Whole Living. I use three berries instead of only blueberries and also simple syrup instead of sugar that were in the recipe from the show.

What You'll Need
Ingredients
  • • 1/2 cup sugar
  • • 1 cup blueberries
  • • 1 cup strawberries, hulled and sliced
  • • 1 cup raspberries
  • • 1/4 cup fresh lemon juice
Directions
  1. Put sugar and 1/2 cup water in a small saucepan and bring to boil over high heat, stirring until sugar is dissolved. Set aside.
  2. Combine blueberries, strawberries, raspberries, and lemon juice in a blender and purée until smooth, about 30 seconds. Add 1/3 cup simple syrup and blend just until combined.
  3. Transfer purée to ice pop molds and freeze 4 hours. Insert ice pop sticks and freeze an additional 4 to 6 hours, or until frozen solid.
