Author Notes: When the heat rises, cool off with a delicious frozen treat. Loaded with fresh berries, these Popsicles are perfect on hot summer days.
I couldn’t believe how simple it was to make these frozen treats. You can strain out the seeds if you like, but I love the texture they give to the popsicles or use boysenberries, pitted cherries, or other favorites instead of the combination of fruits or berries I have in here or just strain, chill, add sparkling water and you will have a delicious and healthy drink.
The idea for this Popsicles I got from a Martha Stewarts show about Vitamins and Whole Living. I use three berries instead of only blueberries and also simple syrup instead of sugar that were in the recipe from the show.
Simple syrup makes the popsicles less icy and more velvety than sugar alone. - Kukla
- • 1/2 cup sugar
- • 1 cup blueberries
- • 1 cup strawberries, hulled and sliced
- • 1 cup raspberries
- • 1/4 cup fresh lemon juice
- Put sugar and 1/2 cup water in a small saucepan and bring to boil over high heat, stirring until sugar is dissolved. Set aside.
- Combine blueberries, strawberries, raspberries, and lemon juice in a blender and purée until smooth, about 30 seconds. Add 1/3 cup simple syrup and blend just until combined.
- Transfer purée to Popsicle molds and freeze 4 hours. Insert Popsicle sticks and freeze an additional 4 to 6 hours, or until frozen solid.
