Author Notes: I love the dainty Benedictine cucumber tea sandwich, but when I'm in a hurry I slap together this rustic kitchen-sink version. - Louisa
- 1 small cucumber
- cream cheese
- 1 green onion
- fresh dill (optional)
- 1 slice Pepperidge Farm Ancient Grain whole wheat bread
- While the bread is toasting peel cucumber, slice lengthways and scrape out seeds. Slice the cuke into long ribbons.
- Spread the toasted bread with cream cheese and sprinkle chopped green onion on top.
- Top with cucumber ribbons. Sprinkle with dill, salt and pepper.
