Honey Cake

Author Notes: To be honest, I am not a honey cake fan, but this recipe passed down from my mom from her mom is really good and so easy by kids can make it. I think the secret is the coffee. - Tamar Genger

Serves 8

2 eggs
1 cup sugar
1/2 cup oil
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup soft honey
1 cup strong coffee (it can be decaf)
2 teaspoons baking powder
2 cups flour
1 cup nuts and/or chocolate chips (optional)

Combine all ingredients and pour into a well greased and floured loaf or bundt pan. Bake at 350 degrees for 45 minutes. Allow to cool before removing from pan and serving.
