Honey Cake

Author Notes: To be honest, I am not a honey cake fan, but this recipe passed down from my mom from her mom is really good and so easy by kids can make it. I think the secret is the coffee. Tamar Genger

Serves 8

  • 2 eggs
  • 1 cup sugar
  • 1/2 cup oil
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 cup soft honey
  • 1 cup strong coffee (it can be decaf)
  • 2 teaspoons baking powder
  • 2 cups flour
  • 1 cup nuts and/or chocolate chips (optional)
  1. Combine all ingredients and pour into a well greased and floured loaf or bundt pan. Bake at 350 degrees for 45 minutes. Allow to cool before removing from pan and serving.

Thanks for catching this, it was one cup sugar - I fixed it.
