Cauliflower Leek Soup

Now that Fall is here, it's getting chilly out. Try this soup, it will warm you up in no time! —Chef Laura at Home

What You'll Need
Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 onion, chopped
  • 2 leeks, chopped
  • 1 head of Cauliflower
  • water or vegetable stock
  • a few sprigs of fresh thyme
  • salt & pepper
  • lemon juice & zest {optional}
Directions
  1. Start by adding olive oil to a large pot over medium to high heat.
  2. Saute the onion and leeks till tender, then add garlic until fragrant.
  3. You can now add the Cauliflower florets to the pot.
  4. Cover with water or vegetable stock and bring to a simmer.
  5. Once the Cauliflower is tender, season with fresh thyme, salt & pepper.
  6. I like to use an immersion blender to puree the soup.
  7. You can also use a blender or food processor.
  8. Just be sure to work in batches.
  9. Stir in lemon juice and zest.
  10. Serve hot!

This was delicious! Thank you.
I did'nt have any thyme. But i added some rocket, chili oil and small pieces of toasted rye bread.
