Oma's Bavarian Cheesecake Bites
Makes 20 bite size pieces
Base
- 1 1/2 sticks unsalted butter, cubed
- 2 large eggs
- 1/3 cup granulated sugar
- 2/3 cup all-purpose flour
- 1 teaspoon baking powder
- 1 vanilla bean cut length wise and scraped
Cheesecake
- 3 large eggs, separated. set egg yolks aside and beat egg whites until stiff, chill
- 1 pound cream cheese, cubed
- 1 vanilla bean cut length wise and scraped
- 1/2 teaspoon fresh lemon juice
- 1 small handful lemon zest
- 1/2 cup granulated sugar
- 1 package vanilla sauce mix
- 1 12 oz log goat cheese, cubed
- Preheat oven to 325 degrees fahrenheit. In a bowl, cream butter, 2 eggs and 1/3 cup sugar until fluffy. Add half of flour, mix well. Add remaining flour, baking powder and 1 vanilla bean. Mix until smooth. Pour mixture into a greased spring form pan.
- In a separate bowl, cream 3 egg yolks, cream cheese, 1 vanilla bean, lemon juice, lemon zest, 1/2 cup sugar, vanilla sauce mix and goat cheese. Mix until smooth. Gently fold in 3 chilled egg whites. Pour on top of base and bake 50 minutes. Let cool and refrigerate overnight. Before serving, cut into bite size pieces.

So there seems to be a computer glitch. In the cheesecake ingredient drop down, the ingredients end after goat cheese. The system has seemed to repeat a few ingredients. :(
