Crabmeat au gratin bites

This recipe is a family favorite. What makes it taste good, is buying Foley's Crabmeat. You have to put tasty crabmeat in this dish, not a substitute, not flat lifeless crabmeat, and sorry, canned doesn't cut it either. 6-8 oz. of Foley's crabmeat in the Boston area costs $8-$10. (2011) One thing I did not put in the ingredients, is that sometimes I put ready to eat dill dip in this recipe instead of the sour cream and dill. I would use fresh dill if I had some, instead of the dry. Choose the Bay's English Muffins, they are in the refrigerator area if your store has them. If you don't have them, choose your favorite. I have made this filling in tiny pre made filo cups, and that works too. The crabmeat filling is also good, dropped in dollops into a quiche, as it is my crabmeat quiche recipe too. Ingredients
  • 1 tablespoon diced red pepper
  • 1 tablespoon minced scallion
  • 2 tablespoons hellman's mayonaise
  • 2 tablespoons sour cream
  • 1 teaspoon tabasco hot sauce
  • 1/2 teaspoon dill
  • 1/2 teaspoon garlic powder
  • 1 splash fresh lemon juice
  • 6-8 ounces container of fresh crabmeat chunks
  • 1 beaten egg or egg white
  • 1/3 cup shredded monterey jack cheese
  • 1/2 cup mixed grated cheeses, like mexican
  • 1/4 cup a cheese like jarlsberg, emmenthal, gruyere cheese, grated
  • 1 pkg Bays English Muffins
Directions
  1. Dice the peppers and scallions and put in a mixing bowl, adding the mayonaise, sour cream, tabasco, dill, and garlic powder.
  2. Check the crabmeat for big shell pieces and sprinkle with fresh lemon juice, squeezing it all over the surface. Toss the crabmeat into the bowl of mayo etc. Use forks to lift the crab and fold loosely in the mayo.
  3. Add the monterey jack cheese to the mayo and crabmeat, toss again lightly
  4. Beat the egg or egg white and pour it over the crabmeat, folding loosely
  5. Break or cut apart the english muffin halves and arrange on a cookie sheet cut side up, in rows. Spoon even amounts of crabmeat over the surface, until the bowl is empty. It should be a little chunky. Sprinkle the grated cheeses over the top, and cook in your oven like you are making a tuna melt. I preheat my convection oven to 400. A standard oven temp, would be 425.
  6. Bake until bubbly, about 15 minutes before you want to serve them. Using a pizza cutter, wheel through the middle of the english muffin halves, making an X, creating 4 pieces from one muffin half. These triangles are easy to pick up, and if you have used the proportions I give here, usually are not so messy that you can't pick them up and eat them with your fingers.
