Vanilla-Stewed Fruit

Author Notes: This is another one of Isabelle's (boyfriend's mother) recipes. I still cannot believe how much work one vanilla bean does. It makes the fruit taste rich and buttery, without adding any actual butter. (Or sugar for that matter.) This fruit is perfect for a winter weeknight (and breakfast the next morning). Serve it warm on it's own, or with plain yogurt or ice cream. Reserve the vanilla bean for another use!cristinasciarra

Serves 4

  • 2 apples
  • 2 bananas, very ripe
  • 1 vanilla bean
  • 1/2 cup water
  1. Core, peel and chop the apples. Mash the bananas. Stir them together inside a Dutch oven.
  2. Add the water and the vanilla. Set the heat to medium and cook, covered, for 10 minutes.
